09-26-07: Introduction and orientation: Bio of
Instructor: History of kitchen design, the work triangle and
why it is inadequate, fundamentals of kitchen organization.

10-03-07: Field Trip: Appliance center to see kitchen
appliances and fixtures and discuss their advantages and
disadvantages. Field trip location – Universal Appliance &
Kitchen Center – 12050 Ventura Blvd., Suite B-105 – Studio
City, CA 91604 – Tel. (818) 755-1111.---10-10-07: Field
Trip: Cooking for eight or more – live! Spend time in your
instructor’s kitchen seeing how a well designed kitchen
functions.

10-17-07: Student projects – Measuring, drawing
kitchens to scale for kitchen planning. Guest lecturer
Laurie Merrill (7:30 pm)4A. Unfortunately we cannot discuss
students personal kitchen designs. The kitchens we learn
from are given by the instructor for the entire class.

10-24-07: Basics of kitchen organization, role and
placement of appliances, gas vs. electric, flow patterns,
etc.

10-31-07: Field Trip: How cabinetry fits into the kitchen
– storage subsystems, cabinetry dry storage (stock modular,
semi-custom, modular, custom modular and custom millwork),
choosing cabinetry, materials and finishes, kitchen

11-07-07: Lighting – lighting techniques,
terminology, fluorescent, direct and indirect, placement.

11-28-07: Getting it together: How to minimize problems
with installation of cabinetry, counter surfaces,
appliances, and flooring. Guest lecturer: Fred Meir,
Contractor – at classroom.

12-5-07: Hoods and how they operate; Counter surface
materials and faux finishes.
Guest Speaker: Bob Bergstrom, Vent-A-Hood.

12-12-07: Field Trip: Tools of the trade (pots, pans,
knives, small appliances). How they fit in the kitchen.
Assessments of small appliances and knives. Sur La Table
(Farmers Market) Retail Culinary Store.

12-19-07: Term project presentations and evaluations.
Class will be NKBA Meeting – Note: Date to be announced and
which may take precedence over any class. There will be a
$25.00 charge for dinner.
